How to Make: Salmon Goat Cheese Salad

This recipe requires:

  • 2 lbs. salmon
  • ¼ cup soy sauce
  • ¼ cup honey
  • 2 tbsp. mirin
  • 10 figs
  • ½ pack of cherry tomatoes
  • 3 cucumbers
  • 2 avocados
  • 1 package of crumbled goat cheese
  • ½ package of pistachios
  • 1 package of mixed greens
  • Balsamic vinegar

Directions:

  1. Preheat oven to 350 degrees.
  2. In a large bowl, add soy sauce, honey, and mirin. Mix the ingredients.
  3. Place salmon into the bowl and leave to marinate for 30 minutes.
  4. Place the salmon along with the marinade into a baking pan covered in aluminum foil and put it into the oven.
  5. Bake for 10 minutes.
  6. Switch oven to broil and leave salmon for another 5-7 minutes.( watch carefully to prevent burning!)
  7. While the salmon is in the oven, wash mixed greens, cherry tomatoes, cucumbers, and figs.
  8. Slice the cherry tomatoes and figs into halves.
  9. Dice the cucumbers.
  10. First, place the mixed greens into a large bowl.
  11. Next, add the tomatoes, cucumbers, and figs.
  12. Then, place the salmon into the bowl.
  13. Drizzle balsamic vinegar onto salad.
  14. Sprinkle the pistachios and goat cheese.
  15. Enjoy!
